This recipe for an un-gourmet gourmet meal isn’t even really a recipe, more like a dirty little secret. It’s pretty healthy, since the butter and oil are minimal and it’s packed with lean protein and nutritious, seasonal veggies! The best part though, is that you can just use whatever’s in the fridge without going to the store. Also, you’ll really impress whoever you’re cooking for and not have a lot of dishes.Picture from pre-baby days, when I had wine with dinner every night!
Ingredients: I really don’t measure for this…but I tried to estimate
- 2-3 servings of lean protein, like chicken of fish (probably around 2/3 – 3/4 lb.)
- a few tablespoons of butter and/or olive oil
- seasonal veggies (enough for one dish)
- white wine
- juice from half a lemon
Step 1: Take out a large skillet/fry pan and sear some chicken or seafood over a little butter or oil. Cook about 90% of the way through. I’ve made this with chicken, pork, salmon, shrimp, swordfish. You know, whatever.
Step 2: Remove contents of pan, throw in about a teaspoon more oil or butter, and saute some aromatics (garlic, onion, shallots, fresh herbs) for 2 minutes. Again, whatever’s around.
Step 3: Throw in your veggies (tomato, spinach, kale, asparagus – I like to use what’s seasonal and in the fridge) and let them soften, usually about 5-10 minutes depending on what you started with.
Step 4: Add about 1/2-3/4 cup of white wine and cook that down to about half. Fact: cooking with wine means your fancy =)
Step 5: Hit the sauce with a little more butter a little lemon and bring to a gentle simmer.
Step 6: Add your meat or seafood back in for about 3-5 minutes.
Serve with whatever starch you’ve prepped (potatoes, rice, pasta), a nice glass of white, and cloth napkins.
